There are times when I get so bored with meal planning that I want to give up and head to the most convenient place for lunch. But don’t!! Here are some simple ideas to spice up your boring old meal plans. 

Turkey Tacos

The key with turkey tacos is to get creative with the spices. If you like it smokier, add more cumin or paprika, if you like it spicier, add more cayenne pepper. For a layer of sweetness, try adding a tsp of brown sugar or a can of fire roasted tomatoes instead of rotel. This dish is simple to take on the go too. Just add whichever toppings you have on hand, a bag of corn chips, some extra salsa and you have a taco salad. 

  • 1T Olive oil
  • 1 Clove of Garlic or Garlic Powder
  • ½ Onion of Onion Power
  • 1 package of ground turkey (I personally like 93%/7%)
  • 1T Chili Powder
  • 1T Ground Cumin
  • 1T Ground Paprika
  • ¼ tsp Cayenne Pepper
  • Salt/Pepper to taste
  • Salsa (couple tablespoons)
  • 1 can Rotel Tomatoes

Heat the olive oil in a sauté pan over medium heat. 

Add the onions and garlic. Cook until translucent.

Add the ground turkey meat. Separate and stir until just browned.

Add the remaining spices, salsa and rotel.

Stir until combined.

Serve with Tortilla Chips or in Taco Shells and Salsa. 

Optional Toppings:

Plain Greek Yogurt

Roma Tomatoes

Shredded Lettuce

Avocado

Shredded cheddar cheese

Turkey and Tomatoes over Jasmine Rice

This is one of the simplest recipes ever! If you don’t have these herbs on hand then get the canned tomatoes seasoned with Italian herbs. This one is even better on day 2 once the flavors meld together. 

  • 1T Olive oil
  • 1 Clove of Garlic or Garlic Powder
  • ½ Onion of Onion Power
  • 1 package of ground turkey (I personally like 93%/7%)
  • 1T Dried Oregano
  • 1T Dried Thyme
  • 1T Dried Basil
  • Salt/Pepper to taste
  • 2 cans Diced Tomatoes

Heat the olive oil in a sauté pan over medium heat. 

Add the onions and garlic. Cook until translucent.

Add the ground turkey meat. Separate and stir until just browned.

Add the remaining spices and canned tomatoes.

Stir until combined.

Serve over Jasmine Rice. 

Optional Toppings:

Roma Tomatoes

Shredded cheddar cheese

Sautéed squash and zucchini

No Bun Turkey Hamburger

I have to give my husband props for this one. He patties the meat and cooks these on the grill. The only spice that he adds is Mrs. Dash Chicken seasoning! He cooks them a over medium flame for about 10-12 mins. Serve with sautéed squash and zucchini and brown rice.

Optional Toppings:

Yellow mustard

G Hughes sugar free BBQ sauce

Wickles original wicked sandwich chips

Asian Ground Turkey Lettuce Wrap

Again, these are super simple to make and easy to take on the go.

  • 1T toasted sesame oil
  • 1 clove of garlic or garlic powder
  • ½ Onion of onion power
  • ½ tsp fresh ginger
  • 1 -2 carrots
  • 2 stalks of celery
  • 1 package of ground turkey (I personally like 93%/7%)
  • Salt/Pepper to taste
  • Tsang Szechuan Sauce

Heat the sesame oil in a sauté pan over medium heat. 

Add the onions, garlic and ginger. Cook until fragrant.

Add the carrots and celery

Add the ground turkey meat. Separate and stir until just browned.

Add the remaining spices and sauce.

Stir until combined.

Serve in a leaf of bibb or butter lettuce or a whole grain wrap

Optional Toppings:

Sautéed Sliced mushrooms
